BBQ Black Bean Loaf

I made a BBQ Black Bean Loaf for dinner last night and it was a winner on several fronts. Firstly, it literally took me 10 minutes from the 4 pm: "Shoot, I have to get something for dinner!" Until it was in the oven. Secondly, it got 2 thumbs up from all 7 of us (14 thumbs up!). And last, but it least, there was just enough leftover for BBQ Bean Burgers for dinner tonight. Yay x 3!

It was such a success that I made a few more batches for the freezer this morning with the help of some little people here... all made possible by that first giant cup of coffee. But, that story is for another day....

So, here are the easy peasy details and a bunch of mediocre pics to go with them: 

Ingredients:

2 big cans of black beans, drained
1 small can of lentils, drained
2 sweet potatoes, peeled and diced 
Dried minced onion 
Dried rosemary 
1 small can tomato sauce 
1/2 can water
Bragg's liquid aminos 
Oatmeal 
BBQ sauce 


Add all of your beans to a large bowl and coarsely mash about half of the beans. Add the tomato sauce, 1/2 can water and diced sweet potatoes. Throw in some minced dried onion (2 Tbsp?) and Rosemary. (Autocorrect keeps capitalizing Rosemary.....)

Ok, next you add 3 big SWIRLS of Bragg's Liquid Aminos. I know, so vague....but I don't think you can add too much or too little...


Then add the oatmeal- I did about 4 heaping handfuls. 
Stir it up, then transfer it into a casserole dish and top with your favorite BBQ sauce!
Cover with foil and bake at 375 for about an hour. Remove foil and bake until sides are crispy. 

Ah, dinner is ready.

We had it on top of noodles, but alas, forgot to snap a pic of that.
